If you’re going to be cooking this Summer there’s no better time to tune up your knife skills, the ladies will love it. We feature Mr Porter’s Journal here every now and then and it’s not because of a lack of material to post here but rather that they keep bringing out gems likes this that I think you guys could benefit from.
I’m a firm believer in confidence of the hand when it comes to design, confidence in the hand strengthens the bond between the brain and the output you create. What better way to develop this than by practising this skill you know? If you dither and doubt yourself you’re going to get hurt!

“When I learnt my knife skills in Japan, I started with katsura-muki, one of the most difficult yet essential cutting techniques for professional Japanese chefs. It is used for making very thin ribbons of vegetables such as daikon (mooli radish). When I started learning culinary skills, I made sure to practise every night after I finished dinner service. Although I’ve been a chef for 20 years, I practise every day in order to maintain the sensitivity of my fingers and the condition of my knives.”

Last week Mr Porter posts another addition to one of their newer features ‘The Way I Cook’ with Photographer Oddur Thorisson.

 In typically beautiful, high quality and Jazz sound tracked style this video shows you how Photographer and Dog Breeder Oddur Thorisson makes Steak with Béarnaise Sauce and Potato Cake. I’m too big a fan of Steak but this recipe looks worth a try especially considering its simplicity.

Albin Holmqvist teamed up with AEG Ultramix Pro to art direct this beautiful tumblr full of charming videos and recipes.

Now You’re Cooking is fantastic looking tumblr, created as a campaign to promote the Ultramix Pro if all adverts and campaigns were like this then maybe we wouldn’t have a problem with advertising. Albin has done a terrific job art directing this. So terrific that I couldn’t choose just one cover image and so had to use three.

Now on to the actual ‘How To’, this short shows us how to put together a quick simple and tasty looking Chilli Mayonnaise. The only ingredients you’ll need are:
2 Egg Yolks
1 tsp Dijon Mustard
1 tbsp White Wine Vinegar
1 Red Chili
Olive Oil
Salt
Black Pepper
