Take a read of this quick guide to knife skills from top chef Yoshinori Ishii illustrated again by the talented Joe McKendry.

If you’re going to be cooking this Summer there’s no better time to tune up your knife skills, the ladies will love it. We feature Mr Porter’s Journal here every now and then and it’s not because of a lack of material to post here but rather that they keep bringing out gems likes this that I think you guys could benefit from.
I’m a firm believer in confidence of the hand when it comes to design, confidence in the hand strengthens the bond between the brain and the output you create. What better way to develop this than by practising this skill you know? If you dither and doubt yourself you’re going to get hurt!
Here’s a snippet of the How To below and read the whole thing on Mr Porter here.
“When I learnt my knife skills in Japan, I started with katsura-muki, one of the most difficult yet essential cutting techniques for professional Japanese chefs. It is used for making very thin ribbons of vegetables such as daikon (mooli radish). When I started learning culinary skills, I made sure to practise every night after I finished dinner service. Although I’ve been a chef for 20 years, I practise every day in order to maintain the sensitivity of my fingers and the condition of my knives.”

You may have heard about Christoph Neimann’s new app Petting Zoo already, read his piece on The New Yorker about it.

I don’t have a kid and unfortunately that means I can’t legitimately download Christoph Niemann’s app Petting Zoo without looking odd – what I can do though it read about how he created it with his article on The New Yorker. Christoph Niemann is an Illustrator and Author and has contributed works to The New Yorker, The New York Times, Wired and the MoMA.
Recently, he decided to pursue a tiny idea he had and ended up producing an iPad app for kids; heralded by design blogs everywhere he has written a a post on The New Yorker about how it all came about and how he got it done wonderfully illustrated by him as he goes along.
Read the whole thing and enjoy the illustrations here.

There is no escaping Mental Block no matter who you are but Simon Cheadle has created a guide to combat it.

Illustrator and printmaker Simon Cheadle as part of an exhibition with London’s Beach Gallery and agency 5 Foot 6 created an answer to the question ‘How do you overcome a mental block?’ which he then turned into a downloadable print for others to use. His 7 solutions to creative block have been interpreted in his un-signature signature style – he prefers to create with the idea in mind rather than a style and uses a range of different methods to bring visuals to his briefs.
The design itself is a minimally illustrated print reminiscent of a science textbook diagram you can download the print here and check out this interview with Simon Cheadle about the process of this illustration with Dereks here.
